Special features
Harvested by hand in 16 kg crates. Temperature controlled fermentation in stainless steel tanks. Malolactic fermentation in Allier oak barrels on lees and subsequent resting on the lees for 9 to 12 months.
Wood and fruit are heard
We already had the character. The real challenge was to incorporate the complexity and structure of the oak into the personality of our Atlantic red DoUmia, without muffling its fruity identity, freshness and youth. We worked to achieve balance: never before has the dialogue between wood and fruit been so enriching!
